I'm sure there are a few here who already knew I'd post this one ... bluegrass meets hard rock ... THIS is what covers should be ... take a song and put it into your own style, even into a different genre:

I'm not a huge Pearl Jam fan by any means but Mike Mcready is a pretty good guitar player.

It's hard to pick only one but I'm going with this one today. When she slips into a heroin-like slurring of words, it so perfectly captures the essence of this song that I can't stand it, it's just so good.

I recommend not covering Beattle's songs, but a mellow song, with a female artist executing it can work.

 

I thought it was great.

One more song, this time with not 1 but 3 covers for your money. As before, I may have posted any or all of these before.

 

Often I like a cover not just for a change of genre but because it subverts the original meaning in some way big or small. (The Cake one above turns a song of determined triumph into a cold slow-burning rage, while the Beatles one twists exuberant yet understated lust into unrequited love.) The following goes somewhat the opposite direction, turning Mary Hopkin's melancholy contemplation of mortality into a goofy celebration:
