That looks like a delicious recipe too! Did you end up baking margarita cupcakes?

Pfff ... no ... heh. I had other baking to get done in the form of cookies for a care package for one of my nieces; you know, finals are coming and 'study aids' are needed! :)

 

But I will try them out and let you know!

Happy Friday! 

Today is National Beverage Day! There's a lot of ways to celebrate this day... Alcoholic drinks, non-alcoholic drinks, singing beverage related songs... The world is your oyster! 

 

Today is also National Nurses Day! Even though I may hate them when they try to insert a 5 inch needle inside me, they're just doing their job. Thank you for all that you do! 

 

Today is also National Provider Appreciation Day! In this day and age, both parents have to work full-time jobs... In that case, child care providers are a very important piece to their lives. Thank you for all that you do! I'll also say thank you for the providers to older parents too! You deserve to get in on this day.

 

Finally, today is Twins Daily National Vanimal Day! I made it around the sun 1 more time guys!

3 oz tequila blanco

3 oz Cointreau

4 oz simple syrup, or to taste (1 c. water, 1 c. sugar, in a saucepan, bring to boil, dissolving sugar, cool to room temp)

8 oz fresh-squeezed lime juice, or to taste

 

You can make the above ahead of time, and is best to, and chill. When ready to serve, fill glass halfway with margarita mixture, top off with with prosecco. Makes for a light, crisp, a little bubbly, and potent margarita. Depending on the glass size, makes 4-6 servings. I made a double batch last night, which was good for two bottles of prosecco.

Surprised nobody has brought up Mother's Day. Since my own is gone now, after thinking of her I will wish a great day to all you other Mom's (and Aunties).

 

I want to especially here give a shout out to Madre Dos, for all her good work as a host for so many of the young Hispanic/Latino men who are the Twins stars of the future.

Yeah, I just had my toes rolled over by a cart holding 5 boxes of travertine tile. I don't think anything is broken, but ouch.
